The first stage of Dates pickle preparation is the steaming of pitted ripened dates. Ten minutes of cooking makes the dates ready for the next step. We add cooked dates with other sauteed essential ingredients and boil until ready. In addition, our cook moves the pickle to large cooling vessels and later to sterilised barrels. Lemon collected from firsthand vendors or directly from farmers must be sorted for size and damage. The next step is washing and steaming the sorted lemons and then we dry the lemon by wiping them with cotton. The dry lemon is then sliced and sauteed and cooked with pickle ingredients. We allow the pickles to cool naturally and then transferred them to storage containers. Dates and lemon Pickle is a combination of lemon and dates pickles in a proper ratio
